  Organic bone-in pork loin chops from Charlevoix, Port, citrus fruits and chocolate sauce

10 portions 

Ingredients:

  • Organic bone-in pork loin       10
  • Fresh ground pepper
  • Salt
  •  Oil 

Sauce ingredients:

  • Chopped shallot                    2
  • Butter                                  15 g
  • Port                                    250 ml
  • Lemon                                 1
  • Orange                                1
  • Lime                                    1
  • Veal stock                            1 litre
  • Black chocolate                     30 g

Sauce methods:

  • Put the butter in the saucepan
  • Add the chopped shallot and gently brown it
  • Add Port and reduce to nearly dry
  • Zest the orange, lime and lemon, blanch the pieces zests, drain liquid over and keep.
  • Add the veal stock to the first reduction and reduce again until the wanted consistency.
  • Add the chocolate and the zests
  • Stir until chocolate is smooth
  • Keep the sauce hot until the service.

Bone-in pork loin chops cooking:

  • Preheat the grill and oil it
  • Put the pork chops in top and grill squared
  • Serve with sauce and fresh vegetables
