Organic bone-in pork loin chops from Charlevoix, Port, citrus fruits and chocolate sauce

Ingredients:
- Organic bone-in pork loin 10
- Fresh ground pepper
- Salt
- Oil
Sauce ingredients:
- Chopped shallot 2
- Butter 15 g
- Port 250 ml
- Lemon 1
- Orange 1
- Lime 1
- Veal stock 1 litre
- Black chocolate 30 g
Sauce methods:
- Put the butter in the saucepan
- Add the chopped shallot and gently brown it
- Add Port and reduce to nearly dry
- Zest the orange, lime and lemon, blanch the pieces zests, drain liquid over and keep.
- Add the veal stock to the first reduction and reduce again until the wanted consistency.
- Add the chocolate and the zests
- Stir until chocolate is smooth
- Keep the sauce hot until the service.
Bone-in pork loin chops cooking:
- Preheat the grill and oil it
- Put the pork chops in top and grill squared
- Serve with sauce and fresh vegetables
