Chef Dominique Truchon has been in charge of the kitchen at l'Auberge des Peupliers since 1983. A native of the neighbouring village, he is now renowned as one of the greatest chefs in Québec.
His love of the Charlevoix shows itself in his efforts to spread the word about his home. He works closely with area producers to develop the region's products.
He is also one of the founders of the "Flavour Trail", a touristic route for visitors showcasing the products and cuisine of the Charlevoix region.
