Ingredients:
- 10 Organic bone-in pork loin
- Fresh ground pepper
- Salt
- Oil
Sauce ingredients:
- 2 chopped shallot
- 15 g of butter
- 250 ml of Port
- 1 Lemon
- 1 Orange
- 1 Lime
- 1 liter of veal stock
- 30g of black chocolate
Sauce method:
Put the butter in the saucepan
Add the chopped shallot and gently brown it
Add Port and reduce to nearly dry
Zest the orange, lime and lemon, blanch the pieces zests, drain liquid over and keep.
Add the veal stock to the first reduction and reduce again until the wanted consistency.
Add the chocolate and the zests
Stir until chocolate is smooth
Keep the sauce hot until the service.
Bone-in pork loin chops cooking:
Preheat the grill and oil it
Put the pork chops in top and grill squared
Serve with sauce and fresh vegetables
